FLORIDA LIME PIE

FLORIDA LIME PIE

All of your friends who haven’t seen you for 20 years will FLOCK to your house when you whip up this one, plus it is so EEEEE-ZZZZ!

Ingredients:

1 can sweetened condensed milk
1/3 c. fresh lime juice (1-2 limes or you can use bottled key lime juice)
3 eggs, separated


1 pre-baked pie shell (buy it frozen and make this real easy!)
1 c. whipping cream
1 T. powdered sugar
2 t. vanilla

 

 

Directions:

Heat oven to 250 degrees. Whip egg whites until stiff but not dry. In another bowl, beat egg yolks, then add in milk and lime juice. Fold the egg whites into the egg yolk-lime juice mixture, just until blended. Pour mixture into baked pie shell and bake for 10 minutes. Let cool, then place in fridge. When ready to serve, whip cream, adding powdered sugar and vanilla (or if you want to be real naughty, make it rum). Top pie with whip cream, and dream of Florida.

FRANK BONUS TIP: Melt 1/2 c. semi-sweet chocolate chips in microwave. After baking pie crust, spread chocolate across bottom. Let cool until chocolate is hardened. Pour lime mixture in and proceed as above. EXTRA GOOD!
