FIREHOUSE CHILI

You can mess around with this recipe. If you don’t want the ground beef or turkey, skip them and make it veg. You can mix up the peppers—use Anaheim or ancho peppers in place of the green pepper. If you want it spicier, use more jalapeno or cayenne. Just don’t get it too hot or you’ll need the fire department.

Ingredients:

 

2# ground turkey or beef
2 medium onions, chopped
1 med green pepper, chopped
1 med red pepper, chopped
1 med yellow pepper, chopped
4 cloves garlic, minced
1 jalapeno, minced
2 chipotle chilies, minced
1 large sweet potato, peeled and cut into ½” dice
1 can (or 1 -1/2 c frozen) corn
3 cans 14-1/2 oz each diced tomatoes
1 can black beans
2 cans pinto beans
1 can kidney beans
2 c. beef or chicken broth
3-4 T chili powder
2-3 T cumin
1-2 tsp cayenne
1 tsp oregano

 

 

Directions:

Brown the ground beef or turkey in a large pot. In a separate pan, sauté the onions, peppers, garlic and jalapeno. Add pepper mixture to ground meat, and add the sweet potato, tomatoes, beans, corn and broth. Add spices and simmer for 45 min-1 hr; adjust spices. Serve with garnishes of sour cream, chopped cilantro, and grated cheese.
